Mustard is more than a condiment. It has been known as a healing remedy for millennia because its seeds are thought to have an anti-bacterial effect. We encouraged local farmers to start planting this crop again in 2004. We make delicious condiments and mustard oil from it. The latter can be heated up to 180°C. But mustard has much more to offer.
It has an important function even in the field: It extends the blooming season and thus helps honey and bumble bees and other insects to make it safely to autumn. This is vital to maintain biodiversity.
We gently grind the press cake left over from the oil production into flour which we then blend with durum wheat. The result is a light pasta that can be served with a multitude of dishes.
